We like this veggie beef soup. It makes a huge pot but you can half (or quarter) it easily
VEGGIE BEEF SOUP 2 lbs stew meat 1 1/2 c. chopped onions 29 oz tomato sauce 4 cans stewed tomatoes 8 lbs frozen mixed veggies 1/2 c. parsley flakes 8 c. water, more or less to desired consistency Brown meat and saute onions. Combine all ingredients in a large pot. Bring to a boil. Reduce heat and simmer. ---------- Post added at 04:34 PM ---------- Previous post was at 04:33 PM ---------- I have a turkey in the oven. Just kidding, Sam got a sudden fever, they both were covered head to toe in rice, dirt, and water, and I suddenly feel like I have more gravity than normal. Take out pizza, salad, oven zucchini (again), and leftover green smoothies from snack time. Hubs alsso got the Combo Fried Veg Appetizer platter from the pizza place, but I was like, "I'm sorry, you've met me before, right?"

Well, we left the decision up 'til the last minute and ended up with Mediterranean Tuna Casserole. It's in the oven. I'll do green beans on the side.

I made such yummy food tonight!
It is from this cookbook: if it makes you healthy: More Than 100 Delicious Recipes Inspired by the Seasons by Sheryl Crow & Chuck White I put what I made in the review there in my blog I changed the recipes some when I made them because I have a tough time actually following recipes exactly because what if they have ingredients in them that I don't have or don't want to use? Or, what if I have stuff that would be good in the recipe? So, I use what I have and improvise usually. For the soup, I forgot the canned tomatos - and it was good anyway. I did not put peppers in the cornbread - did not have any. For the caprese salad - I used tomatos- one red and one yellow, sliced cucumber, marinated mozzarella balls, fresh basil leaves, fresh sliced mushrooms, some green cabbage sliced thin, and some sliced olives that were stuffed w/ garlic and jalapeno (from Costco - I love those things!) and salt and pepper, olive oil, balsamic vinegar, and brown rice vinegar. We ate some tonight and the rest is marinating in the fridge until tomorrow. Yum!

DH is out of town, so the kids had maple sausages and eggos with cantaloupe and strawberries. I had a baby romaine salad, with tomatoes and green onions.

BBQ ribs, pasta n cheese w broccoli, baked potatoes, and tomato salad. Going to the grocery store to see if they have any ripe peaches for dessert.

I was supposed to make chicken taco salad last night, but instead we ordered 5 pizzas. So I have chicken in the fridge that I need to use tonight - I'm thinking of doing some kind of grilled chicken and pasta salad instead of tacos... it's SO warm and beautiful out today, it only seems appropriate!

Salmon. It's been a long time since I've done them up with rum... hoping I can find that recipe around here somewhere. I usually do a lemon dill rice with salmon and whatever veggie appeals to me at suppertime; might be carrots tonight... we'll see.
