I had to google that one, too. I have no familiarity whatsoever with authentic Mexican and Tex-mex sorts of foods. We have Taco Time and that's about it.

A dough stuffed with either something savory (meat, beans, cheese, etc.) or something sweet like fruit. All sorts of combinations listed at that link. Fried or baked, pretty sure fried is traditional.

My fridge foraging resulted in a very green green smoothie and sliced red and green peppers dipped in hummus. Kids ate pasta and toast.

We ended up making burgers topped very simply with cheese and lettuce last night and they were sooo filling I'm glad I didn't make any sides! I've got a burger cookbook that I hadn't used yet, so I pulled it out and used one of the mixes that sounded tasty (to add to the ground beef).
No idea what I'm making today yet. I'll have to ask DH if he's craving anything. |

We're having something from my childhood that my parents called pile-on. It's seasoned ground beef, macaroni noodles, steamed corn, cheddar cheese and a homemade tomato sauce, layered on a plate with the tomato sauce last so it makes the cheesy all ooey gooey. Sometimes I have diced onion on top of mine, but nobody else in my family likes that. I think my parents also had diced green pepper as well, however, I don't usually have green peppers on hand. My kids don't eat it layered; they like it all in separate piles on their plate.

It's going to be about 65 degrees at dinner time and the university we live next door to is on spring break so I'm packing a picnic and we're eating "out" today some manner of pasta/veg/vinegarette, grapes, + cheese for the boys, + chicken sandwich for hubs.
