Re: SO what is for dinner?
We had a frittata tonight with a sweet potato/bacon "crust," zucchini, spinach, onion and cheese. Even though ds said he didn't like the onions, he at 4 pieces.

Re: SO what is for dinner?
Thank goodness for this thread because I totally forgot that I was supposed to put Mediterranean Chicken (chicken, tomatoes, artichokes) in the crockpot this morning! I think it should still cook in time if I do it on High instead of Low.

Re: SO what is for dinner?
Roasted eggplant and fontina pizzas, oven zucchini sticks and potato chips, and monkey bread. It's our anniversary today and it's finally back to being cold enough to turn the oven on again!

I'm having a salad with Romaine and Leaf Lettuce with fresh strawberries, candied pecans and home-made poppy seed dressing.
I also have some oven fried chicken strips and rolls. |
