Can you help me out with a crockpot dinner idea?
I have some premade up basmati rice that I'd like to use.
I have dry beans...so I'd need to get them pre-cooking now if I want to use them tonight... I have all sorts of tomato everything. I have fresh spinach or frozen green beans, corn, or a casserole mix. I have fajita seasoning and veggie broth. Ideas? ---------- Post added at 12:10 PM ---------- Previous post was at 12:06 PM ---------- Oh and I have some premade seitan I could use... |

Or make chili. I like chili and rice.

We are just finishing up chili.
I'll get some beans on now. That sounds good. |

Re: Can you help me out with a crockpot dinner idea?
You've gotten some good ideas so I wanted to first address the pre-cooking of the beans. You don't have to.
For our beans (we make them anywhere from 2-3 times a week), we just put the beans in (after rinsing them) and add boiling water and set to cook on high. I've always been told NOT to add salt during the cooking process, that the beans will retain a bit of crunch. So I always add them once they're cooked. We always add a chopped onion to the pot when we start it up and sometimes some minced garlic. Now, we also do garbanzos the same way and let me tell you. There is NOTHING like crockpot garbanzos. They are like butter. I DO put salt in them in the beginning. I just do what I'm told by my grandma who is the bean queen. Oh, garbanzos. I need some. They are magnificent. HTH and makes it simpler for you. Jen D.
