I went simple tonight. Threw a couple chicken breasts in the IP with 1 cup of salsa, pressure cooked, shredded, and served on taco shells. Roasted carrots, brussel sprouts, onion, garlic and mushrooms on the side.

No water. The breasts emit enough liquid so that you don't need anything additional. It was a bit liquidy but I shredded the chicken and put it back in and it soaked up most of it. We had a bit of liquid leftover but not a ton.

Today is Fishy Friday. We've got co-op all day, then errands to run and I've got a rehearsal tonight, so the timing is tight. I'm thinking heat and eat - salmon burgers (or fish sticks for the littles), oven fries and broccoli. Boring, but I'll make it up this weekend.
I probably need an Instant Pot, right?!
