Default waiting to can?

So if I cook the preserves and put it in the jars, could you then wait hours to hot water 'can' the jars?

Nope. The food your canning won't be able to get back to the proper (read safe) temperature during the water bath if it's allowed to cool first.

Keep the filled jars in the pot or keep the preserves in the pot before portioning it into the jars?

You have to follow safe food handling rules here. Personally, I wouldn't mess with the system when it comes to food I'm going to preserve for a long time and then feed my family. The risk of mishandling the food and poisoning someone is just too great in my mind.

If you fill the jars, immerse them in water and then let it all cool, it won't cool fast enough to be safely stored. When you boil it again, it may or may not get hot enough in the centre of each jar even though the water is boiling. Too much uncertainty here for me.

If you make the preserves (single or double batch, not too big a pot) and then put that pot straight in the fridge, it should cool quickly enough to be safe. Put that pot straight back onto the stove a few hours later and bring it back to boiling and you'll be fine.

Your original question asked about reserving already-filled jars. That's the scenario my answer was for.

yeah I changed it on you just cuz the first way wouldn't work. I've got this new kid and while he's pretty easy I could imagine him waking up or needing to eat while I was processing the jars.

I totally understand that! Yeah, I'd just leave it in the pot until such time as you're reasonably sure you'll have a long enough stretch to do the ladling out and water bath all in one shot. I always wait until hubby is home and the girls are in bed. The only danger then is falling asleep while I'm waiting (if I'm dumb and sit down instead of doing some sort of chore). Always set a timer with a loud beeper when canning late in the evening.
