It's My Mama's SomeAssemblyRequired Lasagna 1 hour from prep to table. 1 container small curd cottage cheese 1 package shredded mozzerella or italian cheeses mix shredded cheese (4 cups) 1/4c parmesean 1 egg 1 clove garlic 1t or to taste Italian seasoning Lasagna noodles cooked per box instructions 1 jar of good sauce + 1 can of the cheap stuff or 1 can of diced tomatoes mix the cheeses and the egg in a bowl put a small amount of sauce on the bottom of your lasagna pan and a layer of noodles, then a layer of cheese, then sauce, then noodles/cheese sauce....top the lasagna with a layer of noodles and then pour the rest of the sauce over the top. Put the whole rig on a cookie sheet and bake at 400 for 45 minutes. Enjoy.

4 cups ricotta cheese, 32 oz
2 large eggs 2 packages frozen chopped spinach (10 oz each) thawed and squeezed with clean towel to remove excess moisture 1/2 small bag of shredded carrots 6 cups tomato sauce, store bought or home made (I actually like white sauce for veg lasagna...so I use my favorite alfredo sauce instead) 12 no-boil lasagna noodles, 8 oz 1 pound fontina cheese, 4 cups, shredded salt and pepper 1. Preheat oven to 400. In a medium bowl, whisk together ricotta cheese, eggs, 1/2 tsp salt, and 1/4 tsp pepper. Add spinach and carrots, and stir well to combine. 2. Spread a small bit of tomato sauce in the bottom of the pan. Arrange a layer of noodles on top. Spread 1/3 of the ricotta mixture over the noodles, followed by 1/3 of the remaining sauce; sprinkle with 1/3 of the grated cheese. Repeat to make 2 more layers, ending with cheese. If freezing, cover tightly with plastic wrap. Before baking, defrost in the refrigerator overnight. 3. Cover with aluminum foil. Bake 30 mintues. Remove foil; continue baking until top is golden brown, about 15 minutes more. Let cool slightly before serving. Note: This recipe makes one large lasagna (9x13 inches) or two smaller ones (8x8 inches). When baking lasagna that has been frozen, add 10 minutes to the cooking time. Frozen, uncooked lasagna will keep for about 2 months in the freezer. I usually do 2 8x8. I cook one and freeze one. |

those other recipies look good - think I'll go through and try them all as well.
But have to add this one as well - made it last night and it was really good vegie lasagne 350 g tub of ricotta (i used a fair bit less which was fine) 6 sheets of lasagne 2 handfuls cheese 'meat' sauce 2 tbsp olive oil 2 chopped onions 4 crushed garlic cloves 1 cubed eggplant 2 red capsicums cut in trips 1 tin tomatoes 2 tbsp tomato paste 2 tbsp balsamic vinegar 2 tbsp capers (optional) handful sultanas 2 tsps chopped oregano salt and pepper white sauce 1 cup cold milk 2 tbsp butter 2 tbsp flour pinch salt 1 tsp dijon mustard handful cheese 1. make 'meat' sauce: heat oil, fry onions till soft. add garlic, eggplant and capsicums and cook 5 minutes. Add remainding ingredients. bring to boil and simmer 2. white sauce: put all ingredients except cheese in a pan and heat fast, stirring the whole time. when the sauce boils, lower heat and add the cheese. (to made it tastier, I put some fresh herbs in the milk first, boiled it, and then left it to soak for 10 minutes and then strained) 3. assemble: in a tray, cover the bottom with half the 'meat' sauce. put 2 lasagne sheets on top, and coat with white sauce and the ricotta. add another layer of lasagne, then 'meat' sauce, and lasagne. Coat with white sauce, and sprinkle with cheese. bake in a moderate oven for 20 minutes.

Lasagna has changed for me over the years as DH can not handle much cheese, I am the only vegie in the house and my youngest and I can no longer have Wheat. So I use whatever I have and experiment. I now use polenta or GF pasta layered with grilled vegies (bell peppers, zucchini, tomato, portabello, yellow squash etc.) use garlic, herbs any cheese you have and layer with a yummy sauce. I uses fresh chopped spinach if I have some and use ricotta and tons of cheese if DH is traveling and most of it is for me. Hope you find something your family loves.

I usually do eggplant and/or squash. I chop it up and saute it and go on as I would a meat lasagna.
