That sounds like a lovely meal.

We're having meatballs, mashed potatoes, and green beans for dinner tonight.

We're going to my IL's beach house tomorrow for a week; I'm trying to figure out what (and how much) to take with us. We do a lot of grilling and salads there because it's convenient and FIL has a garden. But it gets repetitive.

I love CB & Cabbage. But dd is a vegetarian and dh doesn't like. Ds likes it but he says if I;m going to do that , he'd rather have roast. So I just do it in March and make dd and dh fish sticks to eat instead.

I made Chipotle style food tonight. Cilantro lime rice, black beans, roasted corn, pico, sour cream and cheese. Fresh salsa.

My avocados were hard! Boo.

I also made taco meat for people who would like that but I was fine sticking to the vegetarian options.

We had egg roll bowls that both girls are two weeks ago but tonight both turned there noeses up at the veggies that are in it.

i think I might do the beef and crispy rice sometime with tofu for dd. She doesn't really do tofu but it might be a good foray into it.

I actually used cod for the Thai fish and it was good!

The beef and crispy rice was a huge hit with my family. I think I saw someone asked about subbing for tofu in the comments of the recipe

I've really been on a beet, pear, greens, feta, vinaigrette salad with steak kick. I've been getting beets in a produce basket I get every week, and they sent a recipe for this salad with the first basket I got from them. It is sooooo good. I have been making it at least once a week for the last month.

That's what I had for dinner tonight.

Eggplant Parmesan today!

I used to LOVE Eggplant Parm. Obsessed with it long ago . . . before dc.
Tried to make when married but before dc. It turned out terrible. The eggplant didnt cook right.
However, I was just learning to cook back then, now I have a lot more experience under my belt. Im giong to make a pot of pasta for a side because 1. ~~the ravenous monsters~~ my dc will eat it with EP 2. If the EP doesn't turn out we still have food. and 3. I wouldn't say ds is "picky" . . . especially for a 13 year old boy, he eats a lot of variety of foods and good healthy foods too . . . HOWEVER, he isnt quite as adventurous as dd and then he can have pasta if he really doesn't like the EP.
