Pumpkin brownie-like bars Vegan SO YUMMY!
Okay, I made these up and they are DEELISHUSS! They are vegan and are good for dessert or even as a breakfast cake (like when you have to take something to Bible study or something)
2 cups whole wheat pastry flour 1tsp. baking powder 1tsp. baking soda 1tsp. each cinnamon allspice ginger 1/4 tsp. salt mix, set aside 1/2 cup sugar 1cup pumpkin puree 1/2 cup oil mix, then add the flour mixture from above. Bake in 8x11 pan at 350 for 35 min (my oven is not always the most exact, follow your own better judgement as to how long a fairly dense pan of bars would take in your oven. . . ) I frosted these with some Better than Cream Cheese thinned with a little vanilla soymilk but they do not "need" frosted. . . .OH MY WORD THESE ARE SO GOOD! Enjoy!

To clarify, I am an idiot, and often type with my 22 month old climbing all over me and the computer. (Where's the emoticon for that?) There is ONE CUP OF PUMPKIN PUREE (canned or not noone cares) in these bars. So sorry. And to think, I actually did proofread that. . .

I made these and they taste delicious! Mine came out a bit dry and crumbly though, so I may add a little more oil to make up for that. It's possible that I cooked them too long, but I'm not sure. I used a 9 X 13 pan, but may use a 9X9 next time and that may help with the dryness.

Cristina - I'm glad they were good for you - maybe the pan size was behind the dry problem? I use a 9x13 pan for almost everything, but I also have the rectangular pan that is one size smaller (8x11, I guess) and it does work better for "bars" like this that are not quite cake. . .

I tried this yesterday and mine came out pretty bad. The texture was fine, they were just kinda bland. One thing I messed up on was I didn't have whole wheat PASTRY flour, so I used half whole wheat/half regular flour. I guess if I put icing on them they'd be OK. No, nevermind. they are pretty awful. I took half the batch to my friend's and told her kid's they were cookies they gobbled them up. At least i know where to dispose of unwanted baked goods!
I realized I had a LOT of pumpkin left in the can (one of those big cans - 30oz or something) so I also made a loaf of bread and pumpkin cake. Those turned out delicious, but weren't vegan. |

We don't do white flour, traditional "chocolate cake" kind of baked goods, so things I make (well, really most healthful whole grain low - or - natural sugar vegan recipies) taste "bland" if you're used to the more "evil" of the sweets I remember making some bars that had millet and apricots and almonds and stuff and trying them and going. . . blargh people eat this stuff? But then I tried it again because dh liked them, and they kinda grew on me. I think the ol' buds have to be eased into healthful eating. . .
bliss, the vegetarian who's still not too fond of actual vegetables. . .

These were very good. I have a fear of running out of food. So, I doubled it and used a 9 x 13 pan and it rose up a lot! I think too much. I had to add some soymilk because the batter was too thick. I frosted mine with cannned cream cheese frosting.

These are totally fabulous! I experimented with adding different spices. I think I've made them 3 or 4 times now and I LOVE THEM!
