Margaret schedule is crazy busy now that they are just a few weeks away from performance week. Today she has a regular ballet class from 4:45-6pm then nutcracker rehersal from 6-9pm. I'm going to take her out to an early dinner when I pick her up from school at 3:10. Her choice.

I sauteed a pound of ground turkey, added cubed potatoes, chopped cabbage and cubed zucchini as well as a packet of Taco scrubbing seasoning and water let it simmer until done, then added shredded cheese, green onion and cilantro. I served it as tacos with corn tortillas and avocado, with steamed broccoli and cheese on the side.

Littlest wanted ravioli last night and we were out of the homemade stuff so I bought frozen. I made turkey and ricotta meatballs and pulled some homemade marinara out of the freezer to go with it. And garlic bread. It was definitely light on the veggies.

I forgot to go grocery shopping yesterday so I made quiche and roasted butternut squash. Surprisingly we all liked it. I’ve never made it for dinner before only for holiday breakfast.

It's Strange Combinations Night (aka Leftovers). Our fridge is overflowing!
My older kids asked for (Italian) Meatball subs and (Asian) Fried Rice. I asked, "Are you sure you want them both together?" Their Response? "Yes! It's Culinary Fusion!" I may or may not have called it Culinary Catastrophe.
