Tonight is tacos and I am hoping of getting some other things cooked to make the rest of the week work.

Re: October Dinners
Last night I tried making black bean burgers for the first time. They were pretty good! I probably still prefer actual hamburgers but DD's youth leader eats with us every Tuesday and is a vegetarian, so I decided to try it. I served it with a grilled corn & feta salad, and watermelon. It's still hot here so I haven't embraced fall yet.
Today I'm making Chicken Tikka Masala in the crockpot, with roasted cauliflower and naan.

Re: October Dinners
I usually love everything from Nagi at Recipe Tin Eats but I just made 2 of her recipes that we didn't love. Her emergency corn chowder and her 1 pot chili mac & cheese. They were fine, they weren't awful, but I won't make them again. And both recipes made a TON of food.
All of her Asian recipes are fantastic. |
