Default Looky what I've been up to....

One of the offerings in the local co-op I belong to was a case of Kirby (pickling) cucumbers. I jumped at the chance to try my canning skills at pickling.

I made several types; however, most need to way a few weeks to several months before they are ready to be eaten. I made Kosher Dill (whole and spears), Spicy Kosher Dill, Bread and Butter, and Sweet Cucumber Relish.

I don't have a garden (I don't think much grows when there is no rain and it's 120 degrees). I get all my stuff through a co-op I belong to. It's fresh and inexpensive.

My mouth is watering after seeing the pictures! I used to be obsessed with canning all sorts of food, but I never tried pickles. Now, I only find time for peaches and jam. I love when the counter is full of jars! My mom always told me that the jars have to rest for 24 hours before going to storage, but I think she just liked to look at them for a day.
