A bit of a mish-mash tonight - too hot to cook much, limited brain space in the head chef - creamed spinach with queso fresco, (kinda like saag paneer), green beans for the non-spinach eaters, biscuits, and cheese sauce (I was going to make sausage gravy, but couldn't find any sausage in the freezer).

We went out tonight and I had vindaloo chicken. It was different from any I'd ever had before. Spicier and I think there was some pesto and fresh mint leaves.
I want to try and recreate it. Dh had Korean chicken-fried steak. He said it was the best sandwich he'd ever eaten. I don't bread and fry anything, as a personal boundary , but I'm going to try and make some sweet pickled onions. I have a few Korean inspired dishes that we make and sweet pickled onions would be so good with those. ---------- Post added at 11:31 PM ---------- Previous post was at 11:29 PM ---------- My kids like it but they need to eat a lot of it. Without the traditional crust it's not as filling for them. (Same for dh.) So, my advice is to make a lot. |

Some days I have fantasies about cooking for only myself. Sure, it would be a lonely life, but dinner would be blissfully easy!
Burgers, fries, and roasted veggies tonight. Veggie burger for my veggie son, no buns for the gf girls. That's easy enough. I think I need to make a two-week rotation including vegetarian for everyone (other son loves meat) and meals where I have to do a veg option on the side. Gf/df is second nature, but one vegetarian is tough!

Dh and I fantasize about how easy the meals are going to be once the kids are out on their own.
Mexican Rice Olive oil 2 cups basmati rice Season with salt, pepper, granulated garlic, granulated onion, and cumin Saute these together until the rice smells nutty and the cumin is fragrant. Then add: 4 cups chicken broth 1 can rotel (tomatoes and peppers) Cover and bring to a boil, turn down to a simmer and cook for 15 mins. Stir and serve. Cilantro and Lime Black Beans 1 can black beans, undrained Season to taste with salt, pepper, granulated garlic, granulated onion, chili powder and cumin. Bring to a simmer. Add: Juice of three limes A bunch of chopped cilantro Heat through and serve. The rice and beans mixed together are really good, too.
