Tonight we had mushroom fajitas from the Oh She Glows cookbook. They were delicious.
We had a lentil cauliflower soup from the same cookbook earlier this week. It was also delicious. Tomorrow is Greek pasta salad with breadsticks.

Last night was Tofu Miso Soup.
Tonight is leftovers from the weekend. (DD and I go to the climbing gym on Monday evenings) Tomorrow is fend for yourself. (I have wts class, yoga and then hair appt). However, I have a plan after Tuesday. I will Kroger-pick-up (where you drive past and they chuck bags of groceries into the back of your minivan) on the way home from work - Wednesday - Falafals Thursday - Soup (not sure what kind yet) Friday - Enchiladas, red sauce Saturday - Chili I dont have the list on me, its at home so I may be missing something for Sunday or thats as far as I got.

Tonight I decided on the fly what we were having for supper while grocery shopping for the week. I picked up and prepared stuffed spinach artichoke mushrooms, Italian chicken sausages, and sauteed Parmesan cauliflower rice. All of it was from Aldi, I might add, except for the Parmesan cheese that I already had on hand. Why don't I shop at Aldi every week? I would save so much money!!!

It's been raining nonstop so it was definitely a soup night! I made Chicken Enchilada Soup for the first time....SO easy and yummy!
