Default Vegan and sugar free (honey or sugar alternative ok) cookie recipe

I want some oatmeal cookies. They must be vegan and they must be sugar free, as in I need to be able to sub the sugar with honey, blackstrap, agave, etc.

Got a recipe?

I have one that calls for brown sugar that's amazing. IIRC, you can sub agave for almost any sugar recipe. I'll go google. You could use sucanat for the brown sugar as well, though that wasn't an option you listed.

Let me do some checking.

With that, I'll post my cookie recipe

Chewy Oatmeal Cookies (from the 7 Secrets cookbook)
3/4 c brown sugar (so 1/2-2/3 cup? agave?)
1 cup coconut milk
3/4 tsp salt
1 cup whole wheat flour
1 tsp baking powder
1 1/2 cup quick oats
3/4 cup raisins
1/2 cup sliced almonds or chopped walnuts (optional)
1 cup diced fruit like peaches, apples, mangos, pears, crushed pineapple, or persimmons (probably could omit this in order to compensate for the extra liquid with agave).

Combine agave/sugar and coconut milk in a mixing bowl, stirring until creamy. Add flour, salt, and baking powder and stir just until mixed. Add remaining ingredients, folding in fresh fruit last.

Scoop onto a cookie sheet with a spoon or small ice-cream scoop. The mix should be soft, but firm enough to stay in small mounds.

Bake for about 15 minutes at 350 F or until lightly browned on top and bottom.

What if I don't have quick oats?

I'll try these asap!

And yes, I have and can use sucunat. I'm just trying to avoid white and brown sugar. And minimal alternative sugars.

Thinking maybe I'll do half sucunat and half agave, because sucunat alone seems not to be sweet enough for me and rather bland. lol

Do you have regular oats? You can put them in a blender and just blend them dry and they'll get small like quick oats. The only difference I can see between quick and regular oats is the size, that the quick oats are really chopped up a bit so they absorb water quickly. So, I always keep regular on hand and blend them or process them until they're a bit more fine in texture.

Here's one that needs no sweeteners - the bananas and almonds are sweet enough!

BANANA OATMEAL COOKIES
~ from Simply Natural Baby Food by Cathe Olson

2 c rolled oats
2/3 c almonds
1 t baking powder
1/4 t sea salt
1/2 t cinnamon
1/4 t nutmeg
3 bananas, mashed
1/4 c oil
1 t vanilla
3/4 c raisins

Grind oats and almonds to coarse powder in blender/food processor. Pour into mixing bowl and add baking powder, salt, cinnamon, and nutmeg. In separate bowl, beat together bananas, oil, and vanilla until smooth and creamy. Add banana mixture and raisins to oat mixture. Mix well. Drop by tablespoons onto lightly oiled baking sheet. Bake at 350 for 13-16 minutes. Makes 3 dozen.

Banana Oatmeal Cookies
· 2 bananas mashed
· ¾ up dry sweetener of your choice
· ½ cup apple sauce
· 1 tsp vanilla extract
· 2 ½ cups flour
· 2 ½ cups rolled oat flakes
· 1 tsp cinnamon
· 1 tsp baking soda
· 1 cup raisins
· ½ cup chocolate chips or carob chips
Preheat oven to 350 degrees.
Mix bananas, applesauce sweetener and vanilla in one bowl. In another mix flour, oat flakes, cinnamon and baking soda. Add banana mixture and mix well. Add raisins and chips and mix. Scoop spoon sized portions onto lightly oiled cookie sheet and bake 12-15 min. Makes 6 large or 12 small.
I don’t like raisins very much so I totally leave those out and am very liberal with the chocolate chips and they still turn out well. Also mine where dry so you could probably definitely sub at least a little honey or agave for the dry sweetner. Just eyeball the texture.

I've never made these because I never have all this stuff on hand but they sound amazing so i'm including this one too.
Spicy Oatmeal cookies
· 3 cups rolled oat flakes
· 1 cup flour
· ½ tsp salt
· 1 tsp baking soda
· 1 tsp cinnamon
· 1 tsp nutmeg
· 1tsp ground ginger
· 1 tsp cumin
· ½ tsp dried cardamom
· ½ tsp pepper
· Dash of cayenne pepper
· 1 banana mashed
· ½ cup dry sweetner
· 2 tbsp oil
· 1 cup sour soy milk (soy milk +1 tsp vinegar)
· ¾ cup raisins
· ½ cup chocolate or carob chips
Preheat oven to 375. Mix together dry ingredients and wet ingredients separately. Then mix together adding in chocolate chips and raisins until just mixed. Scoop spoon sized portions onto lightly oiled cookie sheet and bake 8-10 minutes. Makes 6 large or 12 small cookies.
