looking for recipe w/chocolate chips & coconut
"cause that's what i have! It's gotta be egg/dairy/wheat & preferably nut free.

How about something like this:
http://cookie.allrecipes.com/AZ/ChewyGranolaBars.asp I make it with chocolate chips and coconut. Just use a substitute for the flour and butter I think you could probably omit the flour all together.

Easily altered for your needs! btw, make sure the chocolate chips you use don't have grain sweetener in them. many vegan chips do!
Are oats ok? If not I could alter a regular chocolate chip recipe for you. Coconut Chocolate Chip Oatmeal Cookies 1 cup vegan margarine (such as earth balance), softened 1 cup packed light brown sugar 1/2 cup white sugar 1/2 cup non-dairy milk or applesauce (liquid replacement for egg) 2 tsp egg-replacer 2 teaspoons vanilla extract 1 1/4 cups flour (I'd probably use a mix of arrowroot and brown rice flour for cookies) 1/2+1/8 teaspoon baking soda 1 teaspoon salt 3 cups quick-cooking oats (you could use triticale or rye if oats are too close to wheat) 1/2 cup shredded coconut 1.5 cup semisweet chocolate chips Directions 1 Preheat the oven to 325 degrees F (165 degrees C). 2 In a large bowl, cream together the margarine, brown sugar, and white sugar until smooth. Beat in milk (or applesauce), then stir in vanilla. Combine the flour, baking soda, egg replacer and salt; stir into the creamed mixture until just blended. Mix in the quick oats (or triticale/rye), coconut and chocolate chips. Drop by heaping teaspoonfuls onto ungreased baking sheets. 3 Bake for 16 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely. Makes about 4 dozen. |
