freezable vegan recipes/casseroles

I'm starting to nest big time already, even though baby #3 isn't due until January. But since A was so early, I want to make sure I am ready with some meals in the freezer this time around. The thing is, I rarely cook meals for the freezer. I can't seem to find a lot of good vegan casseroles. They all have cheese!
So, does anyone have some yummy recipes to share with me? Anything vegan that freezes well would be awesome!

I recently froze beans, rice, and salsa. It worked. I'd like to hear more ideas too...

I think it would be nice to have a sticky for freezer cooking. It seems to come up every 3 or 4 months. I would love to see more actual recipes though.

Joyful Mommy, I've been cooking out of Moosewood Restaurant Cooks for a Crowd. I got it for a few dollars on eBay, but maybe your library even has it? It has vegan (and vegetarian) meals for 24 or so very generous servings. I've been making one up a week, and dividing into casserole dishes to freeze. It's worked out really well.
