Giant Peanut Butter Cups
You will need a 12 count muffin pan lined with paper liners.
Melt 1/2 cup margarine and add 3/4 nut butter, 3/4 cup graham cracker crumbs, and 1/4 cup sugar. Spoon about 2 TBL into each muffin liner. Then melt 1 cup chocolate chips and 1/4 cup soymilk together. Make sure the heat heat is on med or low and that you stir it often. It will burn easily. Spoon over top of the first mixture in the paper liners. Garnish with chopped nuts if desired. Place in fridge to set up. Should take around 6-8 hours.

Yum! I like the graham crackers in it; I bet that improves the recipe! I made vegan and nut free easter eggs (like the Reese's kind) for DS for easter last year and he LOVED them. I'll have to modify the recipe to be like yours!

I am working on setting my *high heat* to medium or low.
The recipe sounds yummy. I'm thinking of making today if I can think of a graham cracker substitute. i don't have any in the house. |

<glutenfreecreations.com> has gluten-free mock graham cracker crumbs for baking. They are vegetarian, but not vegan. I am going to try them out.

That was quick ladies. When I had a microwave I used that for melting chocolate. It works really well. Just do 5 or 10 seconds at a time. Once it starts to melt you should have to heat it too much more. It burns quick in the microwave though.
I think any type of hard cookie would work. It just needs to keep it's shape a bit. It gives the filling it's texture.

Oh and when I made mine similar, I used coconut oil and powdered sugar.
