We had leftover grilled chicken + scalloped tomatoes last night. Tonight we're leaving the younger two with a sitter and taking our big birthday boy out for cheeseburgers to celebrate being TEN

I haven't been to the store this week so everything is a bit of a scrambled. I think tonight will be some meat out of the freezer ( I think I have some fish but if not I know I have chicken) with polenta and frozen spinach.

Roasted pork chops. I got "bone in" by mistake and cooked them in our mega toaster oven. They were great! I fried potatoes and steamed zukes/cauliflower to go with it.

I made zucchini boats pizzaiola. I roasted eggplant slices to go with it for dh and me, but the kids ate them.
Oldest was complaining about having ground beef in them, so I switched gears. Half of the zucchini had beef, cheese, and sauce, half were just sauce and cheese with meatballs on the side.

Bone in are our favorite. They're more of a pain to eat but often more flavorful/tender. Plus then you can use the bones for stock DH always grills them. He is a MASTER porkchop griller...to the point that one time we had them when my parents were here and my poor dad got shamed by my mom for how much better DH's porkchops are

Some kind of baked tilapia - I need to figure out seasoning and/or sauce, mushroom risotto, some kind of yellow squash/zucchini side.
ETA: So I ended up seasoning the tilapia fillets with salt, pepper, garlic, parsley, lemon pepper, and lemon juice and then I topped them with crumbled potato chips and melted butter and baked them. They were really, really yummy even though not very healthy and I sauteed a pan of cubed zucchini with salt, pepper, and soy sauce.

I blackened some chicken thighs in a pan with Cajun seasoning and added peppers and onions, finished it with heavy cream and Parmesan. So easy and quick... I planned to put it over GF pasta but we were out.... so I ate almost the whole pan myself
