Brown Bagging It
If you have to pack your lunch what would it look like?
I'm in a rut and need some new ideas. (preferably GF & vegan but I'm pretty good at making modifications so ) I have a microwave available but I do not like microwaved food unless it is simply re-heating soup or something like that. |

Get a bento or divided box. Put leftovers in while making dinner. Add some fresh fruit or veggies and a dip.

Big salad topped with beans, separate dressing in small container
Tabouli with quinoa instead of bulgur, plus chickpeas I eat a lot of cold leftovers for lunch, including soups. Except for things that have rice or tortilla. What are you doing now that you are sick of? |

(we are not gluten free or vegan)
Once a week, we have music lessons and need to eat lunch in the car driving home (so that limits us to mainly sandwiches and other non-messy things): For that we mostly rotate through egg salad sandwiches, chickpea spread sandwiches (chickpeas, mayo, chopped dill peppers, herbs of choice, all mashed together into a spread), and cheese, lettuce, tomato, with tofurkey brand sandwich slices. One time recently, we didn't have bread and used romaine leaves instead of bread with the egg salad. When we go to museums or a day at the park or something and pack lunch (so we'll be eating at a table), in addition to sandwiches, some things we do is: black bean salsa with tortilla chips (black beans, canned or frozen (thawed) corn, chopped tomatoes and/or bell peppers, chopped fresh cilantro, salt and lemon juice, stir it all together) Quinoa salad (cook quinoa, let cool, stir together with whatever cooked or raw veggies, beans, etc are readily available, add salt, herbs, lemon juice to taste) pasta salad Tomato/basil salad (chopped tomatoes, lots of chopped fresh basil, chopped mozzerella (which I apparently don't know how to spell), salt to taste) I like tabouli but the girls don't so I only do that if someone else is around to help me eat it

I don't know what tabouli is.
What I am tired of: hummus & thin sliced veggie wraps, white bean soup & biscuits, lettuce and veggie salad. You are sparking my imagination again which is good. I think I am going to make a curried sweet potato & black bean quinoa salad soon and a black bean salsa with chips. We are not vegan so I could do eggs but I am still making peace with eggs and avocado after a nasty stomach virus this winter. mostly I feel better when. I reduce my dairy intake so I try and keep it vegan at breakfast & lunch since I only have to feed me during those meals. Ooh, I could make a pesto, arugula, roasted pepper wrap. I haven't had them in a long time. |

Here's a basic recipe: http://www.foodnetwork.com/recipes/tabouli-recipe.html Not sure if cracked wheat is the same as bulgur wheat, but I use bulgur wheat. And other than using the correct proportions of water and bulgur wheat, I don't measure anything, just toss everything together based on what I have, and what tastes good.

Oh! I feel kind of silly now. I've had that/make a modified version of that in the summer. I didn't know it had a proper name. I use millet instead of the wheat. No one else will eat it but me.
