a yummy, healthy date oatmeal cookie recipe?
anyone have one? I have dates, cashews and oats I want to turn into cookies . We're traveling this weekend, and a sweet, healthy snack would be great to have on hand. Ideas? I have no allergies.

Oh, I just made some cookies like this (minus the cashews) just last week! I just used the oatmeal raisin cookie recipe off the top of the Quaker oatmeal box as a guide and used substitutions. I used coconut oil for the butter (1/2 c), sucanat for the brown sugar (1/2 c), honey for the regular sugar (1/4 c), an egg, vanilla (1/2 tsp.) whole wheat flour (3/4 c), baking soda (1/2 tsp.), cinnamon (1/2 tsp.), oats (1 1/2 c) and chopped dates (1/2 c) instead of raisins. I also added chocolate chips, but you can just add your cashews instead.
( I just saw that this is in the veg forum... I guess you could use egg substitute and something other than honey if you are a vegan )
