Re: Making My First Pie! (What am I Getting Myself Into?)
Abbi, I didn't look at the label that closely, just saw it. Maybe if I google it I'll get a hit . . .
http://www.postpunkkitchen.com/forum...opic.php?id=24 This thread has some ideas. I did find a link that had ingredients for a non-dairy, non-hydrgenated topping but it had casein in it!!! So, I'm wondering if that product I saw at whole foods has casein, too. The above link mentioned something about Rod's Whipped Topping. It's a vegan website so it would be dairy-free. edited becuase I posted a link about vaccine laws, not DF whipped topping |

Re: Making My First Pie! (What am I Getting Myself Into?)
My husband is going to dance for joy when I tell him that there are vegan alternatives to whipped cream. Too late for tomorrow's pie, but you can bet he'll have me making more pies next week, after we can get some.
By the way, Earth's Balance also makes a shortening sub. Wild Oats sells it where we are, in the refrigerated butter section, but not side by side with the Earth's Balance butter. It's a box of four 1/2 cup sticks, and the packaging and branding are different from Earth's Balance butter, so I didn't notice it for ages. I also saw vegetable shortening in the dry baking aisle, which I assume is nonhydrogenated, as Wild Oats policy precludes any hydrogenated products. I love the Libby's recipe, and especially since I can find evaporated goat's milk, that's the recipe I'm using tomorrow. I tried finding a frozen pie crust, but they all had dairy in them, so tomorrow is my first attempt at a crust from scratch, too. |

Thanks Lisa, I'll have to see if I can find the Rich Whip locally, the ingredients look safe!

Re: Making My First Pie! (What am I Getting Myself Into?)
spectrum also has a natural veg shortening.
I've found that the best improvement to the pumpkin pie recipe is to skip the pumpkin pie spice and use the sub combo of ginger, nutmeg, cloves & cinnamon but also to double the required quantity of spice. It gives a much heartier filling. Also while love the flavor of butter crusts a la martha I find them too short for my tastes and prefer the combo of shortening and butter. A little cider vinegar and powdered sugar makes a wonderful flavored and very tender flaky crust.
