I don't think I've posted for awhile.
Monday - Steak with Beet apple arugula salad
Tuesday - Cajun chicken pasta
Wednesday - Sheet pan bbq meatballs, veggies and pineapple over rice with asparagus from the garden on the side
Thursday - Dill pickle brined wings, potato salad, marinated vegetable salad
Friday - Eggroll in a bowl, rice, mandarin oranges
Weekend - Slow cooker creamy chicken fajita soup

Baby back ribs. Roasted veggies. Air fried potatoes.

We generally don’t eat pork but my dad joined us for dinner and he has been craving delicious ribs. So I made them.❤️ They turned out really good and tender!

Dh is making steaks and Ill roast asparagus and butternut squash for the sides.
DD will be at track so she can make something for herself when she gets home.

I made a Hello Fresh recipe called Firecracker Meatballs. They were really good. Seasonings were soy sauce, ginger, and siracha. They were tossed in a mayo/she cream/siracha sauce at the end.

Steak fried rice. I used left over steak from dd's birthday dinner.

Last night, birthday dinner was steak, roasted potatoes and caesar salad with rocky road cake for dessert. Everything turned out super yummy!

Slacker this week.

Work 2 covid vax shifts this weekend and sent dh to store for fresh fruit/veg. Last night he made dinner. Tonight who knows. I have freezer and pantry food just no plan. So this week will be things like pasta or burritos etc. Next week I am back in!
