Favorite substantial vegan salads?
Something that can keep a nursing mother actually full for a few hours?
So far I like taco salad but that's the only one I know of (beans, rice, salsa, lettuce, cilantro lime dressing) Thinking something with garbanzo beans might be good What salads do you make that are truly meals in and of themselves?

I like salads full of crunchy things like nuts and seeds. I also love, love goat cheese on my salads (not vegan, of course.)
I think tempeh would be very yummy on a salad with ginger dressing, peanuts, carrots, and garbanzo beans.
