Aside from quiche and frittata, I'm out of ideas. If you have great recipes for those to share, though, please share those, too! I stopped selling our extra eggs due to my life being crazy hectic right now so we have LOTS. We are all tired of scrambled eggs.

French toast casserole or "breakfast casserole" with cubed, dried bread topped with cheese, sausage, veggies if you want, and soaked in egg and milk.
What about breakfast burritos or muffin cup eggs (with whatever you want to add) to pre-make and freeze? I love fried egg sandwiches for dinner sometimes. |

Devilled eggs are a favourite around here. You could also add hard-boiled eggs to curry instead of adding meat, or chop eggs for a salad topping. Egg salad sandwiches or potato salad that is heavy on the eggs, too. French toast or crepes. Lastly, custard or chocolate pudding.

Any sort of baking that uses coconut flour is egg heavy.

we make an 'oven pancake' that uses a lot of eggs.
Fried eggs wih rice andstir-fry veggies can be good.
