Homemade pizza. I did get store bought GF crust for Dh but made crust for the rest of us and almost forgot the salt. Ended up kneading it in. Looking good just waiting for it to come out of the oven.

Spices meatballs with hummus, pita, feta and olives. And Greek salad. One of my favorites! I wish lamb was less expensive. I love these meatballs with lamb but I usually use ground beef.

Thanks for the recipe! I'm trying to broaden my cooking horizons and I do love lamb and have some ground lamb in my freezer! So I will try this in the coming days.

It's a typical Monday here so it is DHs come home eat quick and leave again for evening rehearsals night. I've got a crock pot chili going will make some corn bread to go with it assuming I have all I need.

tonight's dinner was fantastically delicious.

My 13 year old has been asking for meatballs for a few weeks now. I keep looking at them at the stores but am completely appalled by the ingredient list. Seriously. Sometimes I wish I could go back to my days of ignorant bliss when I had no idea what was in the food I fed my family.

Anyway, so tonight I made my own meatballs. I just used our meatloaf recipe and formed it in to balls and baked. Then I made a delicious pineapple based sweet and sour sauce, smothered the meatballs in that, and then baked the whole thing. Served it with rice for the kiddos.

Then for dh and I I sauteed zucchini and carrot "noodles" then tossed them in basil pesto. Then I made this hot kale salad: http://www.thepaleomom.com/2012/03/r...ach-salad.html

All of it turned out amazingly delicious. I have pictures. I will add them later.
