Last night was:

--chicken enchiladas, from recipe on Trader Joes enchilada sauce bottle
--mexican rice, http://allrecipes.com/recipe/mexican-rice-ii/
--refried beans
--green salads with southwest ranch, tortilla strips, tomatoes and feta

Tonight most of the family eats at church so Wednesdays I don't cook...yay!

Can I just say that overall this was a successful dinner. However, if I'm ever brave enough to try making Italian Wedding Soup again, I won't go for an easy recipe....it was DISGUSTING! I'd also just use a cheaper roast over the brisket because taste/texture of the meat itself was like my every day roast. The juices however made all the difference. SOOO yummy. The mashed potatoes were super yummy (boil a garlic clove with your potatoes for mashed potatoes, add an chipotle pepper in adobo, & make like your regular mashed potatoes - I used 2 lbs yukon gold which is what the recipe called for). My favorite part, however was the Autumn Chiller. It'll definitely get used again. We haven't had cake yet but as it was falling apart last night I snuck a piece & of course had a lick of the frosting so I'm confident there will be no complaints.

Yay! Thanks for the link to the unstuffed peppers recipe. I was just going to ask for it.

We don't eat rice, but I'm thinking that would be a fairly easy thing to just leave it given that it's just mixed in at the end.

We have parent/teacher consultations tonight, so limited dinner time, so I'm doing a super simple baked chicken recipe as the main course. Add in some sides and a delicious quick dinner.

Baked Honey Glazed Garlic Chicken


Ingredients
2 Raw Chicken Breasts (5oz)
1 Tbsp Natural Honey
1 Tbsp Balsamic Vinegar
1 Chopped Shallot
2 Minced Garlic Cloves
1/2 Tsp Dried Basil
1/4 Tsp Pepper


Directions
Preheat oven to 375 degrees. Place chicken in a foil-lined baking pan. In a measuring cup add all of the ingredients and pour mixture onto the chicken and bake for 20-25 minutes.

y'all. those cupcakes? AMAZING. I am totally flabbergasted how you can achieve that texture with not a single morsel of flour. If I stopped to think about it, I could probably tell the sugar is a little different (xylitol), but if you served them to me under the assumption that they were regular chocolate cupcakes, I would not even blink. they went over SO well last night--it was such a delight to get to treat our friends' DD who hasn't had any kind of cake like that in I don't even know how long

here's a link - though it looks like she has revised it a bit (I printed it five years ago).

I used 3/4 c xylitol instead of honey. she has notes about using erythritol but calls for WAY more than how much xylitol I used. the original also calls for 1/2 t baking soda and 1 T water. I made 12 cupcakes instead of a 9" round, and baked them for about 25-30 minutes (but that was in a stoneware pan, so probably less in a regular pan).

for the frosting, I used only 5 T cocoa and I did not add any stevia. it's got a nice intense dark-chocolate, not-overly-sweet flavor.
