My chicken fingers
This is something I kind of made up, probably similar to many other recipes - I LOVE these!
These are GOOD! Basically here are the ingredients:
I don't have measurements. I beat the egg, dump some milk - add some soy and eyeball if it is enough to do however much chicken I have. The mixture will be a weird grey kinda nasty color. Keep going - its worth it! (remember that most soy sauce has a lot of sodium, unless you buy low sodium, so you may want to go easy on the salt!) Here are my ingredients as I was working. (I used kashi instead cuz I didn't have corn flakes. sometimes I use a slightly sweetened cereal, gives a nice sweetness to the chicken!) so what I do is mix the wet ingredients in one container and the dry ingredients in anothe container. </P> Slice the chicken like so: Here is what they look like pulled apart: then you just dip each strip into the wet ingredients and then into the dry then place them on a cooking stone (or baking tray) I bake them at about 350 or 375 for maybe 15 - 20 minutes. Sometimes not that long cuz they are thin. You do not want to dry them out! Here they are sliced and on a plate. This is ONE chicken breast as you saw above. It will just about feed a family. Thanks for posting the recipe. Is the cereal you wound up using like shredded wheat? I have some shredded wheat going to waste in my cabinet.
