We LOVE zucchini lasagna! It's a pain in the neck but a top favorite for my whole family
Tacos/taco salad at our house tonight. Last night was salmon melts, a simple dinner that's stuff I almost always have on hand. Best during tomato season: 1 can salmon (remove bones and skin) 3 T mayo 1 1/2 tsp paprika 1 tsp garlic powder 1/4 tsp salt Mix and spread on slices of bread. Top with tomato and cheese slices (we like either cheddar or mozzarella/provolone). Bake for about 10 minutes until warmed through and cheese melts, then broil at the end b/c we love burnt cheese I made roasted cauliflower with it: toss 1 head with about 3 T butter, 1/2 tsp kosher salt and some fresh garlic. Spread on roasting pan, top with breadcrumbs and parmesan, sprinkle lemon juice over it all. 450* for about 20-25 minutes.

My mom found corn tortillas that are only 4" in diameter. So we used them tonight. Wiggle worm really likes things that ' are small like me'

I'm so out of the meal planning/cooking groove.
I'm also frustrated with tomatoes this year. They aren't ripe enough at the farmers market and then they rot on my counter before they're ripe enough. I have all these dishes I want to make that my family is asking for b/c we can only eat them in teh summer when tomatoes are in season - bruschetta chicken, bruschetta pizza, scalloped tomatoes, tomato pie - and haven't been able to make any of them b/c of the lack of good tomatoes. Never enough all at once.
