April Meals
It's April! I love this time of year!
What are you making for dinner? Tonight I think I'm making pizza, but haven't consulted my menu yet, although I better consult soon if I'm to get the dough started in my bread machine.

Sunday is homemade Pizza Night and dh is on. I have to make a plan for the week as well. It's Holy Week, so I need to check in with those fasting and get their plans first.

We had shredded chicken and corn, and leftovers. Leftover chicken will be chicken salad, not sure what I will be making the rest of the week. We have soccer practice T/Th, plus ds1 has a makeup game W, and our grocery budget is empty until Thursday so it’s make do and creative meals.

We had slow-roasted crispy chicken, steamed carrots and green beans, and oven roasted potatoes last night.
I have to make a run to the grocery store this afternoon, but I think I'm going to make chicken shawarma and have a Mediterranean platter tonight.

Monday, I made cacio e pepe. Tuesday I made chicken breasts, rice, and creamed spinach. Tonight the plan is to make a ground beef, green pepper, onion, and tomato sauce thing to go over cheddar grits. I may season the meat sauce like tacos, not sure though. Hmm, I think it sounded better when I wrote it on the menu than it does now that I need to figure out how to execute it.

charla, I love just about everything over cheese grits.
But, I especially like smokey tastes the best. Last night, I made white chicken enchiladas. I only had flour tortillas, and very little chicken broth, so I went that direction instead of the ones I usually make. They were yummy. I think I am making lentil soup tonight. I need to go shopping.

We roasted our last Hutterite chicken from the farmer’s market. They are so delicious- they always sell out! I am glad it’s almost market time again! Mashed sweet potatoes and canned peas…because I am using a blizzard (yes, an April blizzard) to clean out the fridge/pantry.

Tonight was dinner for 10. All gluten, dairy, soy, egg, nut, corn, red meat, chicken free.
We had green salad, roasted potatoes, roasted asparagus, salmon, bread and lemon cookies. And all pulled together after I tought two art classes and one math class at co-op today. Clean up is almost done. Then bed. Sent from my Pixel 2 XL using Tapatalk
