I think I'm going to make a beef stew in the Crockpot. Either that or hamburgers and baked beans; I have both defrosting in the refrigerator.

I know I don't post all the time regardless of what I am making but I DO read all YOUR (general) posts and I DO use it for inspiration to be better at meal planning than I would be without it. I REFUSE to give up that I can get good at meal planning and executing on a regular basis. Later this year its going to be a monthly goal where I meal plan and execute per the plan for the entire month. Every day. That month is not this month.
Dh did go to the grocery store this am and I had him pick up a bunch of veggies and chicken and have a fully stocked pantry so will be able to cobble a few easy things together for the next few days. Pasta, Mexican dishes, sandwiches, salads. The usual.

I ended up making natchoes. I can now find violife shredded Mexican style 'cheese' and they make natchoes wonderfully.

We had dinner guests, but they wanted Breakfast for dinner, so we had baked Denver omelet from cooking classy.com (it was good. I recommend it), cheese grit casserole, bacon, and Belgian waffles. Oh, and fruit.

Ill have to try that. I do red sauce out of a can and its ok but not a fan favorite here. And Ive tried different brands.

This was the stir fry I made on Monday evening. It was sooo yummy and I'll definitely be making it again. I added water chestnuts because I love those crunchy things so much! Black Pepper Beef and Cabbage Stir Fry
Tonight I'm making tilapia piccata, wild rice, and spinach salad with lemon vinaigrette.

I'm doing a random item pantry clean out. So any staples I will not try to use up (pastas sauces, pastas, stir fry ingredients, rice, variety of beans; etc etc etc etc) but I am going to try and use up random items Ive forgotten about or have been in there for a long time.
Today for lunch (we are home due to predicted incoming weather): vegetarian baked beans, turkey sausage, corn bread and asparagus. Basically the baked beans and 1 box of corn bread finished that top shelf to be all organized (I still have 4 boxes of corn bread left for an on hand staple). Now that top shelf is organized and with the baked beans gone. I think ds and dd used to make them more often than they used too and a big can got pushed to the back and forgotten. And we have PLENTY of beans on hand all the time so don't need them just hanging out. Next up the next shelf. But first. . . banana bread to use up the last of the frozen bananas (we can always freeze more later) and my freezer is close to done as well.

2nd shelf from top - done. I have pizzas and green enchiladas on the meal plan for next week to finish up pizza sauce and 1 can of green enchiladas.
I still have some weird baking ingredients but that and any more shelves will have to be another day. Ive lost all interest in this project for today. Dinner tonight is yet to be planned.
