Tonight I will meal and menu plan. Tonight is still fish with rice and salad. Ds wont eat the fish so Ill make him some chicken sausage instead.
I want to do Chili this week.

I had an almond butter/jelly sandwich on gf bread, salad, and a dairy free yogurt. So exciting, I know! Yeah...it was a pretty boring dinner choice.

I had planned pork chops with onions, mushrooms and teriyaki sauce, but my mother was acting weird, which shook us up at much that we didn't feel like doing anything until she woke up hungry. So we had burritos made out of leftovers. Beans, cauliflower rice, ground turkey with potatoes, tomatoes, onions and garlic cooked with taco seasoning

I made myself a weird chicken salad that I haven't had in a long time. I used to make it all the time. It's a can of chicken, diced pickles, mayo, and a touch of avocado oil. Weird, but yummy!
The kids have been grazing, and then I was craving pasta salad. I made it with red lentil pasta, diced cucumbers, shredded carrots, diced green olives, and fresh spinach. I poured Olive Garden dressing over it and mixed it in. You guys...my kids are actually eating this stuff!!! They love it! I was not expecting that, lol!

Beef casserole tonight, with baked potatoes and broccoli. Last night dh cooked pork chops, which we hardly ever have, with a kind of garlicky sauce. I wasn’t sure I’d like the combination of flavours but it was pretty nice!
After all that meat though, I’m planning to have a few vegetarian days next. Not sure what yet, but possibly soup of some kind tomorrow. |
