Default Today I canned...

16 pint jars of peas. And I'm tired. Did all the shelling too (with a little help). The jars do look very pretty though.

We're just trying to get lots of veg canned while it's still the season for it here (West Africa).

I live in West Africa! We can all year round. Different fruit/veg at different times of year. I've just finished the February/March season for peas, tomatoes and things. Then in May/June, we'll have mango jam to make and guava sauce to can!

Sadly, quite a few jars didn't seal for me, but I was able to freeze the contents and the rest seems fine. I'll try to come back and post a picture later.

how exciting! I am committed to canning (I intellectually know how but I've never really done it) when our harvest starts coming in. I'm so in awe of those who can save their food stores that way
