Awhile back I posted about my dd's food issues...one being tomato as a big trigger for her skin issues. She has been REALLY missing some of her favorite foods. Tonight I tried these recipes. I wanted to share since I know some here are tomato free too.

This was really good. I didn't add the red pepper because it's a nightshade and I also didn't put in the lemon juice because it triggers dd too. I reduced the oil a lot. It was really good! My dh, who was highly skeptical because of the beets, said it was one of his favorite sauces I have made!
That's high praise coming from him. lol Dd is happy because we can use this in our lasagna recipe.

I haven't tried this one yet...I started making it tonight and realized I didn't have enough acv left...so the squash is already cooked and the beet stock prepared...so tomorrow I can do the rest. I hope it turns out!
