I hate regular meatloaf, with the warm ketchup on top

...but a few years ago discovered I

Italian meatloaf. I can come back with a specific recipe if you're interested...I mix Italian spices, spaghetti sauce, diced tomatoes, mozzarella cheese and spinach into the loaf, and top it with spaghetti sauce and mozzarella. The original calls for breadcrumbs but I've also used almond meal for a paleo version.
