Re: subtly meat-free entrees?
We eat meatless meals quite often. Here are some more ideas:
black bean soup/chili (I have a recipe that calls for mushrooms, giving a meaty texture)
stuffed peppers or cabbage rolls filled with lentils and rice or quinoa
potato/kale/cheese casserole
vegetable soup of all varieties--butternut squash, tomato, split pea, etc.
stir-fried vegetables with tempeh (cultured soy--tastes much better than tofu) over rice
I often serve a salad or bread on the side.
Even if you don't go completely meatless, you can greatly reduce the amount of meat by serving casseroles and soups. Last night, for instance, we had had chicken soup with corn, potatoes, carrots, onions and garlic. For 6 quarts of soup, I used less than a pound of chicken breast.
I often use meat more for flavor or as an ingredient and not as often as a main entree.
