I make it different ways. If I'm in a rush, I just dump a jar of salsa over it and bake. But, ds loves when I make it with maple syrup, garlic, ginger, and scallions. Per four filets, you need:
1-inch cube fresh gingerroot, finely chopped or grated
2 cloves garlic, peeled and finely chopped or grated
4 green onions (green part only), finely chopped
1 cup finely chopped cilantro
2 tbsp grapeseed (or safflower or olive) oil
Dash of soy sauce or Braggs
4 tsp dark maple syrup
Whisk it all together. Then make a parchment or foil packet around the fish (you can do this individually, but I'm usually lazy and just wrap all four filets together), dump on the sauce (divide evenly between filets if wrapping individually), close packet and bake at 400 for about 20 minutes.
