here's a quickie i use...
Curry in a Hurry
1 tbsp cooking oil (I use coconut oil)
3/4 c. chopped onion (or red onion)
4 garlic cloves (or 1 tsp)
2 tbsp curry paste (I use a little less to suit the little tastebuds in our house)
1 1/2 c. chopped yams/sweet potatoes (peeled)...i like butternut squash better
14 oz. can of coconut milk
1/2 c. broth
1 1/2 c. vegetables (use whatever you have on hand, some examples are green beans, asparagus, cauliflower, peas, snow peas)
1/3 c. salted cashews

Heat wok, add oil. add onion, garlic, and curry paste. Heat and stir until onions are tender.
Add yam, coconut milk and broth.
Stir. Bring to a boil.
Boil uncovered for 8-10 min, stirring occationally until yam is tender.
Add veggies. Stir.
Cook, uncovered, for 3-5 min, stirring occasionally.
Cook, uncovered, approx. 3 min without stirring until shrimp turn pink.
Add cashews. Stir.
Add salt and pepper to taste.
(I also add a couple tbsp of peanut butter after I put the veggies in)
