Fellowship meals are meant to be shared. It's hard when you can't share the food.
My congregation's meals are always 'kosher dairy' which means lacto-ovo vegetarian with the occasional platter of smoked salmon. About 1/3 of the congregation is currently eating raw vegan, so we would gobble up your fruit and veggie tray with much joy.
Things that come to lunch (I assume since you mentioned avoiding dairy/eggs that you are looking for only vegan stuff):
soups - lentil, minestrone, potato
twice baked potatoes
pasta with sauce (keep warm in a crock pot)
pasta salad
tabouli, hummus and the like (though if they don't eat a fruit tray they may not want to touch tabouli, either
)
bean and corn salad (one can each drained and rinsed of black beans, kidney beans, garbanzos, corn + one purple onion and one bell pepper diced, mixed in a balsalmic/mustard vinagrette)
last week someone brought several packages of this:

just plain veggies - a package of frozen vegetables warmed in a dish
As far as avoiding stuff....
I ask A LOT of questions. I don't eat soy/dairy/eggs so there are still lots of things that folks bring that I don't eat. I look at something and ask who made it and then ask the individual if they put any of the above it it..... They are a pretty knowledgeable bunch, and I rarely have problems, but yeah, it does take some work and I often go through the line 'last'.
