I am killing it this week with dinners
Saturday night was tuna cornbread cakes, something DH loves and we hadn't had in ages. He helped me out by frying them while I got the rest of dinner together.
Yesterday we had salmon melts, also something we hadn't had in forever (they are so much better with fresh local tomatoes) and maybe the best roasted cauliflower I've ever made.
Tonight I'm doing zucchini pizza, another summer fave that we can only have when the tomatoes are good and fresh. That's the theme the rest of the summer now that they're in season. Bruschetta chicken, bruschetta pizza, scalloped tomatoes, tomato pie...
