I have done some sprouts. Our HFS sells an already sprouted mix of lentils and some beans. It is yummy. To sprout vegetables you need the seeds.
Some beans aren't safe to eat sprouted. I am not sure if black beans are one, but I'm pretty sure kidney beans have some sort of toxin that has to be soaked and cooked out. I know that lentils and mung beans are safe for the bean category.
