I made this salad low carb for dh by using less sugar in the dressing, leaving out the chow mein noodles and adding more nuts and sunflower seeds. We both really enjoyed it. I store and transport dressing, toppings and salad separately and mix when we're ready to eat.

We also like curry beef or chicken similar to this recipe. Instead of potatoes or rice, I serve it with cauliflower. I also use a can of coconut milk and less beef broth, but I'm thinking just the broth would be lower in carbs.
