Things that could be breakfast that are on my list to try:
Baked Apples (I'm sure you could use juice or water in place of the wine)
Eggs 5 Ways in an Instant Pot
Eggs en Cocotte (though I'd have to do 2 batches to feed my family).
Crock Pot Breakfast Casserole (you could do all your browning in the IP and then add the other ingredients and slow cooker setting overnight).
We sometimes do puddings or custards for breakfast (I cut back on the sugar and top them with fruit), so if you're in the same boat, these might work:
Tapioca Pudding
Rice Pudding
Cheese Flan
I don't know when I'll get around to trying these, but I'll report back when I do!
