Directions:
Preheat oven to 325 degrees. In a large bowl, mix flour, baking powder, baking soda, cinnamon, and a pinch of salt. In a small bowl, mash bananas (zuc??), and add 1 TBS cooking oil, fegan sugar, vegan brown sugar, and vanilla. In a separate bowl (or drinking glass ) mix 2 TBS of water, 1 TBS cooking oil and 2 tsps baking powder. (This is the egg sub - it gets fizzy) Add this mixture to the first small bowl and mix well. Add the wet mixture to the dry mixture and stir until well blended. Pour batter into greased loaf pan. Sprinkle extra cinnamon on top for crispy cinnamon crust and bake at 325 for 50 - 55 minutes or until the top is golden brown and a wooden toothpick comes out clean.

This sounds good, I will try it. My oldest daughter is transitioning over to veganism. Is that how you say it?
