I always start by doubling. x2 juuuust fits in my big oval crockpots. And then I have extra to freeze and pull out for a quick, easy side another night.
I soak the beans at least 8-12 hours in water + ACV, then rinse and proceed.
Because they are soaked you need way less liquid--I reduce it to 1 qt of stock for the recipe (2 qts if you're doubling and making 2 lbs of beans, obvs). Turkey, chicken, pork stock, it doesn't matter. Today is a mix of pork + chicken.
I omit the chili and I always forget the lime juice and we don't miss either.
SMOKED paprika is important
All day in the crockpot; prop lid to let more liquid evaporate off toward the end.
As I said in my original post, we eat this as a side, not with the toast and other stuff she recommends in the original recipe. It is, however, FANTASTIC with cilantro lime slaw (cabbage, green onions, cilantro, and a lime juice-olive oil dressing). Add some feta cheese and you can have just the beans + slaw be a whole meal
