Baked Potatoes with whatever toppings. I like a sweet potatoe with chili. I recently got hooked on Big Mac Potatoes. Itís a vegan recipe using a lentil mixture for the meat and sauce and cabbage. I make regular potatoe in the Instant pot. Sweet potatoes ar cut in half and roasted cut side down on parchment.

You can use leftovers to top them. Like pizza potatoes, chili potatoes, chicken and broccoli.
