White Chocolate and Raspberry Cheesecake
Make base with 200 g digestive biscuits (or ginger nuts, oreos or shortbread) and 75g melted butter.
Melt 300 g of white chocolate, beat 300 ml double cream, 250 g soft cheese (full-fat like philadelphia) and 250 g mascarpone cheese together. Spread half over the base and then sprinkle with 200 g raspberries (fresh or frozen) keeping a few for decoration.
Spread the remaining mixture carefully over the raspberries, smooth and decorate with reserved berries and grated white chocolate if wanted.
Chill for around 5 hours or overnight.
I am assured that it freezes fine too.
I did time and a half of the quantities and put it in a 9 x 13 pan.
