Hope I haven't posted this one already--there are only 2 stuffed chicken recipes in the whole book
eta: I had, on page 2--posting the other one.
Chicken Kiev
2/3 C butter or margarine
1/2 C cracker crumbs
1/2 t. basil leaves
1/2 t oregano
1/2 t garlic powder
2 chicken breasts, split and boned
1/4 c apple juice
1/4 c chopped green onion
1/4 c chopped parsley
1/2 C grated parmesan cheese
Preheat oven to 375. Melt butter or margarine in saucepan. Pound breasts, rub with garlic and brush with margarine. Roll meat as for jelly roll (now bursting into SONG!), tucking in sides. Press ends to seal. Place in baking dish in oven until brown and tender, about 45-50 minutes. Meanwhile, add apple juice and green onion to remaining margarine. Pour over and around chicken, returning to oven for another 5-10 minutes or until sauce is good and hot.
Serve with sauce spooned over.
My mom's note, in pencil: Add spices and cheese to the chicken before rolling up.
