Just thought I'd update - I used Emily's recipe, more or less, since that worked the best with what I had on hand. Since DH had a busy afternoon and I had to work in the afternoon, I put the food in the crock pot in the morning, and all he had to do was adjust the seasonings when he got home. He did add a can of tomato paste to thicken it up a little to the "proper" consistency.
DH liked it!
He went back for a second bowl, and didn't reach for the peanut butter after dinner like he usually does after a vegetarian meal.
Not only that, but we sent DS off to play at Grandma's house for a little while and managed to have a candlelight dinner alone at home. Yay!
