I'm jealous that you're already getting beans from your garden! So far we've gotten lots of lettuce and a couple of small peppers, but nothing else.
I tried a recipe for Greek Baked Feta from Cook's Illustrated the other night and it was delicious! It's just a block of feta place on a bed of chopped green peppers and tomatoes tossed in olive oil, with sliced tomatoes and hot pepper rings on top, drizzled with a little more evoo. Half an hour in the oven (350) then it's finished under the broiler and served with crusty bread. Costco occasionally has an Israeli feta sold in brine that is so wonderfully creamy with the perfect amount of tang. They had it this week, so DH picked it up. I may have to make whipped feta later this wee with the other block.
Saturday night is usually Scrounge Night (leftovers!) but I may make enchiladas instead.
